French Toast with Mascarpone and Berry Toppings

Who doesn’t love a slow weekend morning with a luxurious breakfast? I certainly love to sit back and let the day roll by. And I love a sweet breakfast. This French toast is quick and easy, making it the perfect choice for a lazy day.

Ingredients

  • 1/2 tsp cinnamon
  • 1/8 tsp nutmeg
  • 1 tbsp sugar
  • 2 eggs
  • 1/8 cup half and half
  • 1/4 tsp vanilla
  • 2 tbsp butter
  • 4 slices white bread, challah, or brioche
  • 4 tbsp mascarpone fresca
  • 1 tbsp maple syrup
  • 1 cup blueberries
  • 1 tbsp sugar
  • 1/2 tbsp water
  • powdered sugar, for sprinkling

Directions

  1. In a shallow bowl, mix together the cinnamon, nutmeg, sugar, eggs, half and half, and vanilla. Heat butter in a skillet or frying pan. Dip the bread in the egg mixture, and fry until golden brown on both sides.
  2. Mix together mascarpone fresca and maple syrup and set aside.
  3. Mix blueberries, sugar, and water in a small pot and heat on medium until blueberries burst. Assemble just before serving, and sprinkle with powdered sugar.
