Who doesn’t love a slow weekend morning with a luxurious breakfast? I certainly love to sit back and let the day roll by. And I love a sweet breakfast. This French toast is quick and easy, making it the perfect choice for a lazy day.
Ingredients
- 1/2 tsp cinnamon
- 1/8 tsp nutmeg
- 1 tbsp sugar
- 2 eggs
- 1/8 cup half and half
- 1/4 tsp vanilla
- 2 tbsp butter
- 4 slices white bread, challah, or brioche
- 4 tbsp mascarpone fresca
- 1 tbsp maple syrup
- 1 cup blueberries
- 1 tbsp sugar
- 1/2 tbsp water
- powdered sugar, for sprinkling
Directions
- In a shallow bowl, mix together the cinnamon, nutmeg, sugar, eggs, half and half, and vanilla. Heat butter in a skillet or frying pan. Dip the bread in the egg mixture, and fry until golden brown on both sides.
- Mix together mascarpone fresca and maple syrup and set aside.
- Mix blueberries, sugar, and water in a small pot and heat on medium until blueberries burst. Assemble just before serving, and sprinkle with powdered sugar.
