Cranberry Scones

These scones make great brunch treats! Just… don’t eat all the icing out of the bowl before putting them on the scones like I did.

Ingredients

  • 2 cups flour
  • 1 tbsp sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 cup butter
  • 1/2 cup heavy cream
  • 1 egg
  • 1 cup dried cranberries
  • 3 tsp orange zest
  • sugar for sprinkling

Directions

  1. Preheat the oven to 425 F. Line a baking sheet with parchment paper.
  2. Mix flour, sugar, baking powder, and salt in a bowl. Cut butter into cubes and cut into the dry ingredients using a pastry cutter, a fork, or your hands. The mixture should resemble wet, course sand. Add remaining ingredients, and mix until all ingredients are just incorporated.
  3. Dump dough onto a lightly floured surface and shape into a 3/4 inch thick disk. Cut into 8 wedges, and pace on lined baking sheet. Sprinkle with sugar.
  4. Bake 12-15 minutes, until golden brown. Remove from oven and immediately move to wire cooling rack.
  5. Mix together powdered sugar and orange juice until a smooth icing is formed. Drizzle over cooled scones.
  6. Serve with butter, jam, tea, and clotted cream if you can get it!
