These classy finger sandwiches make for great party snacks in the summer heat.
If you’re like me, there is nothing worse than the unrelenting summer heat. With these recent heatwaves I’ve been wishing for no-heat-needed recipes that I can snack on–other than a bag of chips. Whether you are entertaining friends or just making yourself an afternoon treat, these will impress.
Ingredients
- 16 oz cream cheese
- 4 tbsp fresh lemon juice
- 1 tbsp grated sweet onion
- 1/2 tsp salt
- 20 white bread slices
- 1 yellow squash
- 1 cucumber
- 10 radishes
- salt and pepper to taste
Directions
- Combine cream cheese, lemon juice, onion, and salt, and mix until smooth. Spread mixture onto slices of bread, remove crusts, and cut diagonally into triangles.
- Use a mandolin to cut the squash, cucumber, and radishes into thin slices. Cut the circles in half. Arrange the vegetables on bread slices in a pattern, pressing the vegetables into the bread slightly to make them stick. Sprinkle with salt and pepper, cover, and chill until ready to serve.
